On the advice of The Waylaid Wordsmith, I used the giant zucchini that had been lounging on the counter and replaced the shredded carrots in the carrot cake recipe for the shredded zucchini. And oh, yum. YUM!
You should try it. Right now.
Yum. Cake. Recipes, photos, tips, and the occasional how-to; The things I've learned through trial and error. But mostly error. Who knew playing with frosting (outside the bedroom) could be so much fun??

I absolutely love zucchini bread! Growing up, I would talk about it to my friends and they thought I was crazy, eating bread made with a green vegetable. But, it's delicious!
Mmmmmm...wishing I hadn't used all my zucchini for dinner last night! The zucchini brownies were awesome too, but I looooved the cake. Glad you enjoyed it!
